Ok, I admit it. I miss doughnuts. I don’t need a whole box, but sometimes a nice fresh doughnut with a cup of tea on a lazy weekend morning is just what I crave. So, when I saw the recipe for gluten-free coconut doughnuts in Aran Goyoaga’s new cook book Small Plates Sweet Treats, I knew I must give it a shot. Continue reading

Home Made Muesli
I love muesli. Since my mother is from Holland, and we were fortunate enough to be able to travel over to Europe to visit family when I was growing up, we got to experience many wonderful cultures. Some of my greatest memories is of the food we ate while we were one these trips. Continue reading

Granola for Grandpa
My father loves granola. At any given time if you were to look in my parents’ pantry you would find at least 5 bags of ‘fancy’ granola. I think my dad may have it every morning for breakfast. Therefore, I thought it would be a fun gift to make him granola for Father’s Day. Continue reading

Kale and Quinoa Salad
One of my all time favorite salads is from Fat Cat Pie Co. over in Norwalk, CT. When we go out and find something yummy, Scott likes to say, “I bet we can make this at home.” Now, most of the time I am sure he could make something very similar. However, I always say something to the like of, “No, because then it wont be special when we have it here.” Right?! Continue reading
Chocolate Dunked Rice Crispy Treats
I am big on dunking things in chocolate. For years, my sister has been making me this AMAZING ginger bunt cake for my birthday. It has a wonderful rich chocolate glaze over the top. We always have extra chocolate left over, so we would dig through the pantry and counter top to cover everything from pretzels, to bananas, to graham crackers, and chips. I have not grown out of this love. So, recently I have been craving a new snack…and these felt like a great idea. And, I made them with brown rice crispies….so they are healthy right?! Continue reading
Quick Gluten-free Brownies
I really wish these brownies were harder to make. I saw them here on Gluten-free Girl and the Chef and knew I had to try them out. They are amazing. Nice and chewy on the inside and they have an awesome crackly top. Continue reading
