Ok, I admit it. I miss doughnuts. I don’t need a whole box, but sometimes a nice fresh doughnut with a cup of tea on a lazy weekend morning is just what I crave. So, when I saw the recipe for gluten-free coconut doughnuts in Aran Goyoaga’s new cook book Small Plates Sweet Treats, I knew I must give it a shot. Continue reading

Home Made Muesli
I love muesli. Since my mother is from Holland, and we were fortunate enough to be able to travel over to Europe to visit family when I was growing up, we got to experience many wonderful cultures. Some of my greatest memories is of the food we ate while we were one these trips. Continue reading
Summer Quinoa and Fruit Salad
With all the blueberries we picked, I have been putting them in everything. Here is a great, quick, and refreshing summer quinoa salad. Continue reading
“Go to” Kale Salad
Even since Scott has gotten back from his adventures studying elk and wolves in Montana and Yellowstone, which you can read a little about here, I have taken on project “Clean Out Basement”. Continue reading
Granola for Grandpa
My father loves granola. At any given time if you were to look in my parents’ pantry you would find at least 5 bags of ‘fancy’ granola. I think my dad may have it every morning for breakfast. Therefore, I thought it would be a fun gift to make him granola for Father’s Day. Continue reading
Oatmeal Snack Bites (gluten-free)
I have been in a big gluten-free snack rut recently and those who know me know I am a snacker. A big snacker. So, this rut has been a problem. I needed something quick and easy and that was just a couple of bites. Continue reading
Kale and Quinoa Salad
One of my all time favorite salads is from Fat Cat Pie Co. over in Norwalk, CT. When we go out and find something yummy, Scott likes to say, “I bet we can make this at home.” Now, most of the time I am sure he could make something very similar. However, I always say something to the like of, “No, because then it wont be special when we have it here.” Right?! Continue reading

Yesterday was dark, cold, and really wet. It was a soup day. Here is what I came up with. Continue reading
Shrimp Curry
I love curry. Like, really love curry. When we went to Thailand six and a half years ago, I ate so much curry it was laughable. There may have even been an incident where I used my fingers to clean out a curry pot. So when I found a shrimp curry recipe in American Masala, I was eager to try it out. It was amazing. Since then, I have changed it around a whole bunch, but the original concept and base came from it. This recipe is super easy Continue reading
Gluten-free ‘Bananzie’ Muffins
When I found out I had celiac I mourned a few things: the chocolate croissants from Versailles, fresh pasta at Pasta Nostra, and a real New York bagel. However, the thing that I mourned the most was my mother’s banana bread/muffins. She received this old family recipe from a friend at sewing shop in Brooklyn, NY over 30 years ago. Everyone who has tasted this recipe has always said hands-down it is the best they have ever had. Continue reading
