I could really use one of these right now. I made them a couple of weeks ago and they really hit the spot. First I whipped up a batch of my gluten-free chocolate chip cookies, which you can find here. Once they were cooled, I put a small scoop of gluten-free vanilla ice cream (it helps to have the ice cream slightly defrosted) on one side and then carefully pressed another cookie on top.
I found that if I kind of pressed the top cookie with a slight side to side motion of my hand it causes no cookie breakage. Does that make sense? I then wrapped the cookies up individually in plastic wrap and put them in the freezer to harden. Fantastic. So, good,
